Currently user data (email, name, username etc) is stored in Cognito and the backend only maintains a reference to the users. When a user is deleted from Cognito, it becomes problematic (#643 (comment)) without a clear way of recovery.
We should explore the option of storing user data in the database and relying on Cognito for auth only.
