[RAC][Observability] Update Cases UI "In progress" to "Acknowledged"

📝 Summary

In the Observability Cases page the UI needs to be updated to reflect the recent changes that were done to the workflow statuses. In progress should be updated to Acknowledged

Similar changes should be applied to the Security solution as well.

As per discussion "Acknowledged" does not make as much sense for Cases.

So, we went ahead with:
Observability Alerts == Security Alerts {Open, Acknowledged, Closed} <> Observability Cases == Security Cases {Open, In Progress, Closed}
