[Lens] Support Sampler & Diversified Sampler aggregations

Part of #58628

App-services team added sampler and diversified sampler to AggConfigs and expressions in #120135.

These aggregations could be used to improve performance by loading only a sample set of the data.

We should consider leveraging this newly available aggs in Lens

I really like this feature as it gives the user more control over the speed-accuracy tradeoff. We could monitor the time requests need to complete and prompt the user to use this if they are slow. We should talk about how to expose it though, not sure about this part. It feels like a general configuration of the datasource (or maybe the layer?): "Sample data to speed up processing" or something like that.

current status: we decided this needs to be a requirement for the query bar and dashboards overall vs. just a lens feature. i'd like to track it as part of the unified search project - but unclear how to assign this issue (it still likely is a vis editors issue)
