Allow the creation of custom field labels for use in OpenSearch dashboards

Is your feature request related to a problem? Please describe.

It would be nice to be able to rename fields in Dashboards similar to the OS alias feature. Also becomes more important when you have nested field names which can get unwieldy in the UI.

Describe alternatives you've considered

None at this point, aside from renaming the fields before ingestion, which would be a pain for alot of reasons.

@t-jones this is great, thanks for opening! At least at first glance, we'd need UI for config and some mechanism to ensure the rest of the Dashboard experience pulls the custom label. Oh, and API changes.

@kavilla do you know if there are existing patterns for this type of labeling in the code?
