pact-client is a patch version behind

1.75.1 was released about a month ago, and has a bugfix that we could use. I see that there is another MR for automatically bumping the pact client versions, so maybe this just shows the need for that. Thanks for your help!

the triggered build from the release of the client was quicker than rubygems reporting the version had been released, so the update job failed. I've retriggered it now which is kicking off the release.
