The rationale is that by using variables the theme authors can target them easily in some situations while the style still retains its priority over other styles using !important.

This PR updates the preset classes generated by global styles to use CSS Custom Properties instead of the preset value:

Rationale
The rationale for this change is that, by having these hooks, theme authors can update the value easily while the style still retains its priority over other styles using
!important. Two use cases that this change enables to do more easily are dark mode & adapting size values to media queries, for which we don't have alternative viatheme.json.Related conversation with @ryelle , conversation with @jasmussen, and conversation in theme-review channel ― cc @carolinan @kjellr @scruffian @MaggieCabrera @pbking
