The uProtocol 1.3.6 version that uses CloudEvents will be v1 so the Eclipse version that uses UMessage MUST be v2 to follow semver requirements. #110

The original version of uTwin that will be released in 1.3.6 version of uProtocol will be v1 and it uses CloudEvents in lieu of UMessages so we need to set the version used in Eclipse to v2 to follow semver requirements as the APIs are non-backwards compatible.
