In 6.3 this was moved to `Strings.toString(XContentBuilder)` as part of the XContent extraction. This commit fixes the docs to reference the new method. Resolves elastic#31326

it is odd that this is not a properly tested snippet, if it was we would have caught this problem. but I guess that the java API docs is not that all made with proper code snippets?
