Sometimes the legend isn't that useful so it's nice to hide it, especially for a dashboard. However when you reload the visualization or dashboard, it comes back again.

Panels do not have dashboard level persistence options yet. If you want to hide the legend you can disable it from the view options section of the visualization builder

Did you removed the option of disabling the legend in kibana 5? I can't find it. It's not in the combo box either. I hoped to find "Left, Top, Bottom, Right, and None".
