feat: add serde JSON to JSON serializable structs in parameters #605

Description

In order to allow for external libraries to easily JSON serialise some parameter structs, this simply adds serde deserialize and serialize to those structs.

Performance / NEAR gas cost considerations

None.

Testing

None.

How should this be reviewed

Check and ensure that no other parameters are used in lib.rs, particularly those that implement TryFrom<JsonValue>.

Additional information

Required for aurora-workspaces.
